Contained inside each of these layers are:
Bran: Antioxidants, B vitamins, minerals and a whole lot of fibre. Endosperm: Starch filled carbohydrates (calories and simple sugars) some protein and low amounts of vitamins and minerals. Germ: B vitamins, protein, a variety of essential minerals and healthy fats. If you take away the bran and the germ (which is what is done in the processing and milling of grains) over half of a grains protein and it’s nutrients are stripped away. After milling the endosperm remains which is the most nutritionally void part of the grain. The milling process not only removes most of the nutrients, it also takes away the fibre. The added fibre in whole grains takes longer to digest, leaving you full longer and less likely to eat more than the body needs (which can lead to weight gain.) Simple carbohydrates will go through the system faster which produces a spike in blood sugar levels. This will give you a sudden burst of energy (like a sugar rush) and when your blood sugar then subsequently drops, leave you fatigued and hungry again much sooner. Sudden spikes in blood sugar can lead to an array of health conditions like inflammation and diabetes. Whole grains have a naturally balanced ratio of zinc and cadmium, with slightly more zinc. The zinc is primarily located in the bran of the grain, whereas cadmium if found inside the endosperm. When we remove the bran from the grain, we upset that balance and the body not only absorbs more cadmium, but we also become deficient in Zinc. Zinc is an essential mineral in the body, while cadmium is a potentially toxic heavy metal. The presence of zinc inhibits the absorption of cadmium, and zinc deficiency can lead to cadmium toxicity. Whole grains are much better for our overall health and well being. They might take a little longer to cook and may not have the same texture as the refined variety, but the other benefits far outweigh these details. The variety of different kinds of grains available to us has been growing heaps lately due to the large amount of gluten intolerances and allergies and a lot of them are really quite tasty. We aren’t limited to whole wheat and brown rice. There is quinoa, buckwheat, millet, spelt, kamut, oats, amaranth… the list goes on. Kitchari means: “Mixture” “mess of pottage” “stew” or “porridge”
I learned about the wonders of the Indian dish kitchari earlier this year while I was living and working at a yoga retreat centre. Every morning were greeted with beautiful and aromatic pot of the warming lentil dish for breakfast. I worked mornings in the kitchen so I was blessed with making this dish every nearly every day for a couple of months. I learned that it can be a very simple or very complicated dish depending on the cook and that it can have a large number of variations. Each version is both delicious and highly nutritious, filling and comforting. It is naturally easy to digest, due to its simple ingredients and the fact that they are prepared by soaking and rinsing. Traditionally made with rice and mung beans, the dish is usually spiced lightly with mustard seeds, turmeric, coriander and lots of ginger. It is a warming dish and stimulates the digestive system allowing for natural detoxing and cleansing. Ayurvedic practitioners swear by kitchari for its healing qualities. It purifies the digestive tract and cleanses the body of toxins. It is used in the breaking of fasts, recuperating from illnesses and is also a calming food for times of stress. In Ayurvedic medicine, kitchari is considered to be the “food of the gods” and is the “cornerstone of the Ayurvedic diet”. The dish is made from a mixture of grain and pulse, traditionally mung beans and basmati rice, ghee (clarified butter) and warming spices. It can be made with any kind of split legume, like, red lentils, or split peas for example, and it is often made with brown rice, but can also be made with any grain, like millet or buckwheat. Most versions I have tried tend to also have some sort of vegetable in it, like carrot or potato and zucchini. Kitchari is considered Sattvic; Sattva (Sanskrit: सत्त्व) is one of the three Guṇas (tendencies, qualities, attributes), a philosophical and psychological concept developed by the Samkhya school of Hindu philosophy. The other two qualities are rajas (passion and activity) and tamas (destruction, chaos). Tamas - Density, inertia Rajas - Movement, disturbance Sattva - Knowledge, balance. In yoga, they teach that we must always strive for sattva in all things. That we will always have tendancies towards both tamas and rajas, but to always try to keep sattvjc; the highest of all the gunas. This will keep us balanced and clear minded in our lives, allowing us to achieve our goals and live a happy life. In everyday life there is a difference in how each guna makes you feel, react and respond to situations. When in a state of laziness and stillness, it is difficult to find motivation to get off the coach, go to work, or to shut down our computers, this state is tamas. To get ourselves out of that lethargic state, we force ourselves to have energy to get ourselves into gear, this is us inviting rajas Most people live in a constant state of tamas and rajas, bouncing back and forth between the two all day long. Sattva is a state of calm, clean energy and clear headedness. If you have ever been to a yoga class, you will likely have felt that feeling after arising from the final pose of Savasana -corpse pose. This feeling is often referred to as the yoga high. I also experience Sattva when I am outdoors in a beautiful place, looking at mountains, or gazing at a beautiful sunset. We can help ourselves achieve or find more sattva in all aspects of our lives, from our actions, to our thoughts and even in the things we eat. Kitchari is considered a purely sattvic food, because it is vegetarian. Kitchari: (Kitch- ah -ri) 2 Cups brown rice 2 Cups moong dahl lentils (or red lentils) You can find the moong dahl lentils at the bulk store, they are yellow in colour and not circular, but oval in shape. Soak the rice and lentils overnight and rinse thoroughly before cooking. Boil a kettle full of water (you will use this later). 1 Tbsp Turmeric 1 T Cumin 1/2 T Coriander 1/2 T Ginger powder 2 Tbsp black mustard seeds 2 Tbsp fenugreek seeds (or powder) 1 pinch of nutmeg 1 cup fresh grated ginger root 2 Tbsp coconut oil 1 bunch of fresh cilantro (with the roots if you can find it.) 2-5 grated carrots, or potatoes or sweet potatoes (skin on, and washed.) 2-3 grated zucchini Start with the coconut oil in a pot on med-high heat. Put in the mustard seeds and sauté until you hear all of them pop. Put the remaining spices in the pot and cook until they are fragrant. It does not take long, and be careful not to burn the spices. Add the soaked grains and stir until they are covered in spice. Pour the boiling water into the pot and stir. Add the chopped roots of the fresh cilantro and the grated carrot or potato, whichever you choose. For ease of digestion, this dish is meant to only have 2 different kinds of vegetables one of them a starch, which ones you choose is up to you. Add the fresh ginger root. Cover with a lid and bring to a simmer. The cooking time is long, around an hour and a half. You will likely have to add more water while it is cooking. You are aiming for the lentils to lose their shape and disintegrate, and the thickness should be something like a thick stew. When the lentils have disintegrated, add the zucchini and fresh cilantro leaves and cover, turn off the heat and let sit for a 1/2 hour. Before serving season with salt and pour a generous amount if olive oil over top and stir in. Serve with fresh lemons to squeeze on top. Preheat oven to 350 degrees F and lightly grease a 9-inch square pan and line with parchment paper. Place the following dry ingredients into a high-speed blender and blend: 3/4 cup rolled oats (gluten free if needed) 1/2 cup raw buckwheat Groats 1/4 cup raw sunflower seeds 1 tbsp. chia or flax seeds 1/4 tsp. baking powder 1/4 tsp. garlic powder 1/4 tsp. sea salt Add the following wet ingredients to the dry: 1 cup unsweetened nut milk or organic grass fed milk 1 tbsp. melted coconut oil or ghee Pour the batter into pan and smooth with a spatula. When I was pregnant, I had all these plans about how I was going to feed my child. My career as a chef convinced me that I would provide delicious and nutritious homemade food that my child would love. It started great; he loved breast milk! He was one of those children who didn’t sleep a lot, so at six months I was convinced that if he started to eat food, he would sleep better. Well. That backfired. He did not like food. Nevertheless, he was thriving even though he was not gaining as much weight as other babies, but he was alert and reaching all his milestones. I kept the practice of breastfeeding alive.
Now, at almost ten, he eats well, although he does not eat everything, but that is okay. He always tells me that when he is older, he will like salad, but for now, he eats lots of broccoli, carrots, peas, celery and cucumber, and I can live with that. When my son was four years old, I decided that my path was to go back to school to study nutrition. Here is the heart of what I learned about nutrition: 1. Never bribe you children with candy as it creates an unhealthy relationship with food. If your child does not want vegetables, try again tomorrow. 2. Children have different needs than adults. They need to build, whereas adults need to sustain or cleanse, therefore too many vegetables and not enough building foods can be too cleansing for children. 3. Making homemade cookies is one hundred times better than buying them at the store. 4. Really limit sugar. 5. Start the conversation about food choices young; eventually they will get it. 6. Be consistent, but not dogmatic. Allow them some fun. 7. Talk to them about listening to their body and noticing how they feel when they eat and when they are full. If a child says he is full halfway through the meal, respect that and let them stop eating, but tell them there are no snacks, or if they are still hungry later, they will have to eat the rest of their dinner. 8. Focus on whole foods including grass fed and free range meats and eggs, organic vegetables and fruit, complex carbohydrates (brown rice, whole breads, quinoa, oats) and healthy fats. Avoid all foods with high fructose corn syrup and hydrogenated oils. Eat most meals at home. Avoid all packaged breakfast cereals because the cardboard box it is in is probably more nutritious. In short – probiotics lower the allergic load and decrease the “gunk.” 3. Probiotics help with mood – This is quite a new discovery on the probiotic front. The incidence of learning challenged students continues to rise. Everything from ADD, AD/HD, Asperger’s and Autism along with students experiencing anxiety and depression in school settings, can prove challenging for both parents and teachers. Recent research is showing new gut-brain connections, as happy gut ecology seems to make for happier brains. In one particular study, anxious mice dosed with probiotics showed lower levels of anxiety, decreased stress hormones, and even increased brain receptors for neurotransmitters vital in curbing worry, anxiety and fear. With better mood comes greater ease and ability to learn in school settings and beyond. By Michelle Pascal, Registered Holistic Nutritionist ![]() Whether you’re dairy-intolerant or simply looking for other ways to supplement with calcium, it’s easier than you think to find natural sources of it in everyday foods. Cow’s Milk Cow’s milk has three times more protein and almost four times more calcium than human milk. This amount is suited to a growing calf, but is in excess of human needs. This will create some waste matter in the body and present as symptoms of excess in humans, especially if our organs of elimination are blocked or stagnant. The ratio of calcium to phosphorus in human milk is 2.35:1, but only 1.27:1 in cow’s milk. An optimal ratio is 2:1. An imbalance of phosphorus can combine with calcium in the digestive tract and prevent absorption of calcium. The addition of Synthetic vitamin D in milk encourages calcium to be deposited in the wrong places causing cardiovascular injury and calcification of the kidneys (kidney stones) and other organs Pasteurization and Homogenization Pasteurization has eliminated many infectious diseases, but has also decreased the nutrient content and life-sustaining energy field of milk. Homogenization, the process of breaking milk molecules into smaller pieces, allows elements of milk to pass through the intestinal wall unchanged by the digestive process. One such element called xanthine oxidase, is picked up by the lymphatic system and deposited in the bloodstream after passing through the intestines. As it courses through the arteries, it scratches and corrodes the inside of the arterial walls, causing lesions upon which the body deposits fibrin and cholesterol to avoid further damage. Calcium As a society, we have been brainwashed to believe that it is necessary to consume milk and dairy products in order to receive an optimal amount of calcium. When a person is calcium deficient it is because the body is unable to assimilate and utilize calcium properly. Many foods affect our body’s calcium balance, by either adding calcium in an unbalanced way, counterbalancing, draining calcium from the system, or causing calcium to be deposited in inappropriate locations such as soft tissue. Calcium absorption is hindered by poor liver and gall bladder function, a lack of hydrochloric acid in the stomach, a diet high in meat (particularly red meat) and physical and emotional stress. Insomnia and muscle cramps indicate calcium magnesium imbalance. To get sufficient calcium in your diet one should include plenty of alkaline foods to enhance absorption of calcium, avoid or limit caffeine (leaches calcium from the bones), and include more vegetarian meals and whole foods that are high in calcium. The following list includes many foods that contain calcium in a natural, easy to assimilate form:
Foods that Affect Calcium Balance Dairy products: the unbalanced relationship with phosphorus causes a fair amount of calcium to be incompletely absorbed or incorrectly assimilated. Concentrated sugars: the acidic nature of concentrated sweeteners depletes the body of minerals that aid in the absorption and assimilation of calcium. They also deplete the phosphorus level in the body, thereby blocking calcium absorption. High Protein foods: The acidic nature of these foods acidifies the blood, and acidified blood will dissolve calcium from the bones. It has been suggested that vegetarians have significantly lower rates of osteoporosis. Nightshades: Due to their high alkaloid content, nightshade foods may subtly remove calcium from bones and deposit it in joints, kidneys, arteries and other areas of the body where it does not belong. Wine, vinegar and citrus: because of their natural acidity, these foods require the buffering action of calcium during metabolism. If necessary, calcium will be taken from teeth and bones to accomplish this. Lemons and raw apple cider vinegar are not acidic. Caffeine, alcohol and salt: As with other acid-forming foods, these will demineralize the system through the action of buffering. A dark field microscope is a microscope designed to permit diversion of light rays and illumination, from the side, so that details appear light against a dark background; as opposed to light passing straight through the specimen. If bright lights from the microscope pass directly through the specimen, the heat from the light source will kill the red blood cells faster. Also, by diverting the light rays, a greater amount of depth and detail can be viewed (almost like a three-dimensional view). Dark Field Microscopy thus allows a health professional to evaluate the shapes and other properties of individual blood cells, indicating nutritional conditions which can be adversely affecting a person's health. Avoiding a serious case of influenza is not about vaccination but more about maintaining a healthy, well functioning immune system. By following these simple guidelines, you can help keep your immune system in optimal working order so that you're far less likely to acquire the infection to begin with or, if you do get sick with the flu, you are better prepared to move through it without complications and soon return to good health.
Optimize Your Gut Flora. This may be the single most important strategy you can implement as the bacteria in your gut have enormous control of your immune response. The best way to improve your beneficial bacteria ratio is avoid sugars as they will feed the pathogenic bacteria. Additionally, processed foods should be limited. Use healthy fats like coconut oil, avocados, olives, olive oil, butter, eggs and nuts. Include fermented foods which can radically optimize the function of your immune response. Optimize Your Vitamin D Levels. Optimizing your vitamin D levels is one of the absolute best strategies for avoiding infections of ALL kinds, and vitamin D deficiency plays a role in seasonal affective disorder . This is probably the single most important and least expensive action you can take. Adults need about 8,000 IU's a day. Avoid Sugar and Processed Foods. Washing hands will decrease your likelihood of spreading a virus to your nose, mouth or other people.
